Lauren and I made these for FHE last night: we just made the standard cake mix cookies (we used devils food) and then put store bought mint chocolate chip ice cream in the middle instead of frosting. They were really good, cold, rich, and easy! The best part was smashing the ice cream between the cookies.
We got the idea from a favorite new website, Our Best Bites. These girls are amazing~you will be salivating as you scroll through all of the pictures and recipes~check them out! They give lots of great step by step instructions and pictures to follow. For all you Utah girls, they are doing a free class at Macey's too! They made homemade peppermint ice cream to go in their cookies, but we took the easy route and they were still delish. Here is their recipe we followed. Have fun!

Those look delicious! Looks perfect for us pregnant ladies ;) It was great hanging out with you over the weekend! I'll let you know as soon as I wrap up the editing from the wedding!
